Pu-erh begins its life much like other Chinese teas, crafted from sun‑withered and pan‑fired leaves. The difference lies in what happens next. For Raw (Sheng) Pu-erh, the leaves are pressed into cakes or bricks and then slowly mature over years, sometimes decades. During this time, natural microorganisms and slow oxidation transform the tea, softening edges and developing layered notes that can range from bright and woody in younger teas to honeyed, camphorous, and gently sweet in older vintages.

Ripe (Shou) Pu-erh is created through an accelerated fermentation process, where carefully piled tea leaves are dampened and allowed to undergo a controlled microbial transformation over weeks or months. Skilled tea makers manage temperature, humidity, and airflow, turning the piles regularly to encourage even fermentation. The result is a deep, dark infusion with velvety, earthy flavors—often reminiscent of damp forest floor, cocoa, and aged wood—that is both comforting and complex.

Each cake, brick, and tuocha in our Pu-erh & Aged Teas collection reflects this patient craft. Whether you’re exploring your first sticky rice scented tuocha or comparing the evolving character of well‑stored vintages, these teas invite you to slow down and savor how time, environment, and tradition can transform a simple leaf into something truly distinctive.
